Brownies - Black Bean

Ingredients

• 1 cup canned and cooked black beans, rinsed and drained (Eden Organic canned black beans)

• 1 ½ large eggs• 

1 TBS + 2 tsp olive oil• 

2 TBS cocoa powder

• 1/3 cup (about 12-14) dates, soaked for 1 hr, then chopped

• ½ tsp baking soda

• ½ tsp apple cider vinegar

• ⅛ tsp sea salt

• ½ tsp pure vanilla extract

• 2-3 TBS dark chocolate chips

Directions

1. Preheat oven to 350F
2. Rinse and drain the black beans well
3. Add all ingredients (except choc chips) in blender and blend until very smooth
4. Stir in chocolate chips
5. Pour batter into rectangular loaf pan that has been brushed with butter or olive
oil and lined with parchment paper (I use coconut oil)
6. Bake at 350F for 20-25 minutes, do not overcook
7. Brownies are ready when a toothpick inserted into the middle comes out clean
8. Cool and then cut into squares
9. Sprinkle shredded un-sweetened coconut on top for a little boost! ENJOY!!!
