Bars - Chocolate Coconut - Free of grain, gluten, eggs & dairy

  1. 2 c. shredded unsweetened coconut
  2. 1/4 c. coconut oil
  3. 1/4 c. honey
  4. 1/4 t. kosher salt
  5. 1/2 c. chocolate chips (I used these dairy-free ones, but whatever you want will work)
  6. Optional: a couple of drops of peppermint oil


  1. Warm coconut oil until it is liquid.
  2. Place everything except the chocolate chips in a blender, or food processor (I use this one) and blend on high until smooth. (This will take about 5 minutes or so.)
  3. Spread into a 9x5 plastic container or something foil-lined.
  4. Freeze for about 15 minutes.
  5. While coconut mixture is freezing, melt chocolate chips.  Add a couple of drops of peppermint oil into the chocolate while melting.
  6. Spread melted chocolate over frozen coconut and stick in the freezer again until chocolate is hardened.
  7. Pop out of container/remove foil and chop into pieces.
  8. Consume.
  9. Store leftovers in the fridge.

And since they don’t require anything other than a blender and a freezer, they’re perfect for those hot summer days! The only problem with them is figuring out how to not eat the whole pan myself…
