Cilantro-Lime Cauliflower Rice - gluten, soy, grain-free, Paleo and vegan

Cauliflower rice is made by grating cauliflower, cooking it, and then seasoning it.

Use organic ingredients, if you can.

  • 1 medium head of cauliflower
  • 1 tablespoon coconut oil
  • 2 garlic cloves, minced
  • 1 tablespoon fresh lime juice
  • 1⁄4 cup fresh cilantro, finely chopped
  • Sea salt to taste


  1. Process the cauliflower into cauliflower rice. (Tutorial Here.)
  2. Add coconut oil to a large pan over medium heat.
  3. Add the garlic, cauliflower rice, and lime juice.
  4. Cook for 8 - 10 minutes, until cauliflower rice is tender.
  5. Toss with cilantro.
  6. Add salt to taste and serve hot.


Serve this as the base for your next burrito bowl or with any Mexican-themed entree!
