Dressing or marinade- Paleo Italian

It's hard to find paleo-friendly dressings in the stores, since many of them use a vegetable or canola oil as a base, so I have been making my own dressings a lot lately. Plus I like to make everything myself if I can. Some might say I just like to make my life more difficult... I prefer to think of it as a challenge :-)

A simple Italian dressing is easy to prepare and tastes great on all sorts of salads, veggies and proteins. You can prepare the dry seasoning mixture ahead of time and store it in a sealed container, and then make dressing even faster whenever you need some. How's that for easy?

This dressing also makes a great marinade. I like to put a few boneless skinless chicken breasts in a resealable plastic bag along with this dressing and let it marinate overnight. You can cook the chicken in a crock pot or oven, but I like to cook the chicken on the grill and use the chicken for salads or as the main protein for a meal. The dressing gives the chicken a lot of extra flavor and moisture.

Cooking Time



1 cup


- 2/3 cup extra virgin olive oil
- 1/4 cup apple cider vinegar (or more to taste)
- 1 tsp. raw honey, melted

- 1 1/2 tsp. dried oregano
- 1/4 tsp. dried thyme
- 1/4 tsp. dried basil
- 1/4 tsp. dried parsley
- 1 tsp. garlic powder
- 1 tsp. onion powder
- 1/8 tsp. celery seed
- 1/4 tsp. dried mustard
- 1 1/2 tsp. sea salt
- 1/4 tsp. ground black pepper


Add some dijon mustard to make this more creamy.

Switch out the ACV for Balsamic vinegar and leave out the pepper.  


1. Combine all ingredients together in a small mixing bowl and stir until well combined. Taste and add additional apple cider vinegar if needed. 

2. Store in the refrigerator until ready to use and stir well before serving.
