Funnel Cakes - Easy, Gluten and dairy free

1 pastured egg, beaten

2/3 cup nut milk of choice (add more if your type of flour doesn't make it runny enough to pour)

1 1/4 cup all-purpose gluten-free flour

1 tsp baking soda

1/4 tsp sea salt

ghee or coconut oil for frying- enough to cover the bottom of the skillet, and then some

powdered organic confectioner's sugar for topping


Mix egg and milk. Sift dry ingredients and gradually add to milk mixture.  Beat until smooth.

Preheat ghee/oil in stainless steel frying pan to 375 degrees F, or until a drop of water sizzles.

Pour batter into hot oil with a funnel, spiraling to createa circle.  Allow the underside to brown, around 1 minute, then use a flatslotted spoon to flip the funnel cake over and brown the other side. Remove the funnel cake from the oil and place on a towel-lined plate.

Top with the sugar.
