Guacamole Deviled Eggs

Prep Time

10 min

Cooking Time

for the hard-boiled eggs only

Yields

8

Ingredients

  • 6 hardboiled eggs, cooled and peeled
  • 1 teaspoon of garlic, minced
  • 1 teaspoon of shallot, minced
  • 1 large avocado, very ripe
  • 1 teaspoon lemon juice
  • 3 tablespoons bacon bits
  • pinch or two of salt
  • pinch pepper
  • 1/2 teaspoon of paprika

Directions

  1. Slice your eggs in half lengthwise and spread them out onto a baking sheet.
  2. Dump the yolks from each into a large bowl. Be super careful not to damage the whites, you will be needing them.
  3. Add the avocado, garlic, bacon bits, shallot, and lemon juice into the bowl. Mash and then stir until thoroughly combined.
  4. Taste your mixture and season to taste. It’s likely that it will require more salt than pepper.
  5. Using a small ice cream scoop, scoop out the yolk and avocado mixture into the cavity of each piece of hard boiled egg. You could also use a melon baller.
  6. Once the eggs are full, dust paprika over top of each.

It’s impossible not to eat a few of these as you go, and you will probably have a couple of whites that are too flimsy to fill. Knock yourself out.

Notes

Hardboiled eggs are the ultimate portable Paleo snack, but they do get boring. It’s worth making an effort to include them often though, because they are such a cheap and easy source of complete protein and fat.

If you possibly can, get organic free range eggs. The premium price is really minor considering how far a dozen eggs can stretch. Skip the $5 designer coffee and get yourself eggs from happy, healthy chickens.
