Ice Cream - Coconut, Strawberry (Paleo)


6-8 servings


400 ml can of full-fat coconut milk

1 tsp vanilla extract

227 g of fresh strawberries

2 T honey or maple syrup


1.  Pour the coconut milk into a bowl and add the vanilla extract

2.  Slice the green tops off the strawberries and add 3 quarters of them to the coconut milk mixture, along with the honey

3.  Blend in a food processor until smooth, and pour in a bowl

4.  Chop the remaining strawberries into small pieces and stir these into the mixture

5.  Place into ice-cream maker and churn until creamy and chilled



I think this would be great adding in chocolate chips as well!
