Ice Cream - Margarita (dairy-free)

Prep Notes





  1. Zest and juice one lime. Add the lime zest and juice to a blender along with the coconut milk, honey or maple syrup, sea salt, berries, and stevia.

       2.  Blend until smooth. Pour mixture into an ice cube tray and freeze for several hours, until frozen.

       3.  Add the ice cubes to a food processor and process until smooth. Enjoy immediately for a "soft 
            serve"-like texture. Or, add the mixture to a pyrex or glass dish and freeze for 2 hours until just 
            firm. Then scoop and serve.  Alternatively, use an ice-cream maker.

      4.  Serve ice cream with lime wedges and enjoy immediately.
