The best easy, creamy cucumber salad recipe ever! It takes just minutes to throw together, uses simple ingredients, and stores well, too.

  • 1/2 cup Sour cream
  • 2 tbsp Fresh dill (chopped)
  • 1 tbsp Olive oil (you can sub with avocado or macadamia)
  • 1 tbsp Lemon juice
  • 1/2 tsp Garlic powder (you can sub with chili powder, cumin and ginger)
  • 1/2 tsp Sea salt
  • 1/4 tsp Black pepper
  • 6 cups Cucumber (chopped)
  • 1 small Red onion (thinly sliced)


  1. In a large bowl,whisk together the sour cream, dill, olive oil, lemon juice, and garlic powder. Season with sea salt and black pepper to taste.
  2. Stir in the chopped cucumbers and red onions.


Little mini cucumbers are great for this creamy cucumber salad. Everyone seems to enjoy the fact that they are sweeter than large ones. Besides, it makes the prep process just a tiny bit faster, since you only have to slice them. No additional chopping required.

Don’t feel like you have to use small cucumbers, though. 

This doesn't make too much dressing.  I doubled mine so it would go farther!  Yum!!
