A classic recipe for low-carb almond bread. Throw it all together and voila! A low-carb almond flour bread that slices like the real thing - just low-carb. This should be your go-to recipe for a healthy low-carb bread. Perfect sliced for a low-carb sandwich, toasted or even used for a bread stuffing.


 if your eggs are room temperature when you mix it, there won’t be an “eggy’ taste. Poppe eggs into hot water for 3 minutes.


Beat the egg white to stiff peaks and fold in. It lightens the bread up.


Try making a rosemary version, or a sweet cinnamon/swerve version, or whatever else you can come up with

Ingredients


  • Consider doubling the recipe and adding cook time for a higher bread...
  • 2 cups (200g) almond meal/flour
  • 2 tsp baking powder - or 1/2 tsp baking soda and 1 tsp of lemon juice
  • 1/2 tsp salt or to taste
  • 1/4 cup (20g) psyllium husk - if using a powder, halve the amount
  • 4 eggs - medium - try beating the egg whites to make the bread lighter.
  • 1.8 oz (50g) coconut oil or butter, melted
  • 1/2 cup warm water - try halving this for a less moist bread
  • Optional: add half a tsp of cream of tartar to help the bread rise.
  • Consider adding in 1 T of low carb sugar and/or herbs like rosemary, garlic, italian, oregano or cinnamon
  • Consider adding 1/4 - 1/2 cup of tapioca or arrowroot flour to the almond flour to make things crispy or crunchy
  • Top the bread with Everything Bagel seasoning

Directions


  1. Place all the dry ingredients in a mixing bowl.  Add in your arrowroot flour and/or herbs and sweeteners here.

  2. Add the eggs, coconut oil and warm water. Mix until combined well. Do not over mix.

  3. Pour into a lined loaf tin (7 7/8" x 4 1/2" x 3" : Pyrex - 4.8 cup rectangular glass) is what I use for a nice height for the bread) or a silicon loaf tin.  If using, sprinkle Everything Bagel seasoning on top. Bake at 180C/350F for 30 minutes, or until golden on the outside and cooked thoroughly inside. It appears some ovens require a longer cooking time, so please be guided by your oven.

  4. I used an electric knife to slice the bread after cooling.  This way, you avid compressing the bread.  From there, I freeze the bread, and toast individual slices.
