Real cinnamon bread with bursts of sweet raisins that's low carb! Sounds impossible but this recipe has just 4.3 net carbs! Slice it, toast it, and spread with butter. It's delicious for breakfast or anytime! Best of all? It's done in less than 5 minutes!

I think this bread is best sliced and toasted. Coconut flour can give baked goods a dry texture in your mouth and toasting this low carb bread helps with that a lot. Plus toasting cinnamon bread always gives it more flavor!

  • 1 egg white
  • tablespoon Coconut Flour
  • 1 tablespoon flaxmeal
  • 1 tablespoon Almond Flour
  • 1/2 teaspoon Swerve or other sugar free sweetener cup for cup
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon baking powder
  • 2 tablespoons melted butter
  • 1/2 teaspoon finely chopped raisins optional

Coconut flour, flaxseed meal, and almond flour stand in for wheat flour in this recipe.


  1. Grease a coffee mug - tall and narrow is best.
  2. Mix the coconut flour, flax, almond flour, sweetener, cinnamon, and baking powder together.
  3. Set aside.
  4. Whisk the egg white until foamy.
  5. Add the coconut flour mixture and butter.
  6. Stir until smooth.
  7. Quickly stir in the chopped raisins if you're using them.
  8. Spoon into a greased coffee mug.
  9. Microwave for 1 to 2 minutes or until a toothpick inserted in the middle comes out clean.
  10. Let cool for a few minutes.
  11. Slice into 4 slices.
  12. Toast the slices and spread with butter or cream cheese.

For best results let the bread cool completely before slicing.
