Keto Cauliflower “Fried Rice”

Fried rice is another one of my favorite dishes that I have missed eating out at Chinese restaurants. This cauliflower rice recipe is a great substitution for those times when you’re really craving that Chinese take-out. It’s simple, low carb and doesn’t contain any of the junky ingredients that you might find elsewhere. Feel free to add other ingredients to embellish this recipe- bacon or ham and some mushrooms would be delicious!

Serves: 4-6


½-1 cup frozen organic mixed peas and carrots
2 bags frozen organic cauliflower rice (or 1-2 heads cauliflower processed into rice)
2 tablespoons organic toasted sesame oil
Salt, to taste
¼ cup coconut aminos
2-3 organic eggs, whisked
½ cup organic green onions, sliced (optional)
Organic red pepper flakes, to taste
Organic garlic powder, to taste


1.) In a large skillet, heat the sesame oil until it’s shimmery. Add the peas and carrots and sauté for about 2-3 minutes before adding the cauliflower rice.

2.) Sauté until everything has softened, about 4-5 minutes, then pour in the eggs and scramble. Stir until the eggs are fully cooked and broken up into pieces. Season with coconut aminos, salt, red pepper flakes and garlic powder and serve with green onions on top, if desired. Serve with orange chicken or protein of choice.

If you don’t have a food processor or can’t find pre-made cauliflower rice, you can always use a cheese grater to get the same effect.
