Keto Rocket Fuel Iced Blended Coffee

Prep Notes

A (creamy)  keto upgrade to the classic butter coffee… on ice! Specifically made to assist women in burning fat all morning long while regulating hormones and abolishing cravings.

The key here is smooth almond butter. Use Barney Butter Bare Smooth. It has no sugar or added ingredients, so it’s keto. If almond butter or almond products hurt your stomach, it could be because of the almond skins. Barney Butter uses skinned almonds only, leaving my tummy happy as can be.

Yields

1 20 oz serving

Ingredients

  • 16oz brewed coffee (decaf or regular, or your favorite tea- organic is best, from fresh ground medium to dark coffee bean)
  • 2 heaping T almond butter or 2 tbsp hemp hearts
  • 10 grams cacao butter (about 4-5 wafers) or coconut butter but the final product will be slightly higher in carbs and lower in fat if you do this.(1.5 T of MCT oil. grass-fed butter or coconut oil would be a good replacement for the cacao butter, too!)
  • 1 tablespoon MCT oil or coconut oil (or coconut cream out of a full-fat can. I use 2 T)
  • 20 drops alcohol-free stevia (I use English toffee SweetDrops)
  • ¼ teaspoon ground vanilla bean, optional
  • ¼ teaspoon organic ground cinnamon, optional
  • 4-6 ice cubes (fill to just below the top of 20 oz container)
  • Add in 1T of cacao powder, for a bit of a chocolate kick - optional - for me, not optional!
Toppings

Carol's adjustments are in bold.  I find it tastes that much better to the point of outta site!

Directions

  1. Blend coffee, almond butter, cacao butter, MCT oil, stevia, vanilla and cinnamon in your high-powered blender. Transfer to a jar and place in the fridge to cool completely. I do this step the night before so I have a nice, chilled jar the next morning.
  2. Once chilled, place back in your blender. Add 4-6 ice cubes. If you are not using a high-powered blender, it’s best to break up the ice before you add the coffee. This way, it won’t heat up your drink!
  3. Blend until the ice is crushed.
  4. Pour into a jar, top with coconut whipped cream, cacao nibs and enjoy!
