This blueberry lemon popsicles recipe is easy to make in 5 minutes with 4 ingredients! Sugar-free, low carb, gluten-free, dairy-free, creamy, and DELICIOUS.

Just before serving these sugar-free popsicles, simply run the molds over warm water to loosen them. They come right out effortlessly. Hooray for dessert in no time at all!


6 popsicles


  • 1 1/2 cup Blueberries (preferably organic!)
  • 1/3 cup Erythritol (or any sweetener - to taste-like Lakanto)
  • 1/4 cup Lemon juice
  • 1/4 cup So Delicious Coconut Milk No Sugar Added Ice Cream, Vanilla Bean


  1. Puree all ingredients in a blender. Taste and adjust sweetener as desired.
  2. Pour the mixture into popsicle molds. Freeze for about 4 hours, until solid.
