Who doesn’t love a chocolate chip cookie? They’re delightful and delicious, a go-to comfort food. However, the sugar and the flour? Hmm, not so good. Luckily, low-glycemic, gluten-free chocolate chip cookies can be easy to make and even easier to eat, and I’ll show you how in just a few simple steps. Did I mention you’ll only need one bowl? 

Most chocolate chip cookies recipes use brown sugar because of its slight molasses flavor. Unfortunately, brown sugar is highly processed white sugar combined with molasses.  While the flavor is great, the glycemic index is sky high, and there are a lot of empty calories. In this recipe, you’ll find coconut sugar: a low-glycemic, mineral-rich sweetener, minimally processed with an out of this world caramel flavor.

  1. Preheat oven to 350 degrees F.
  2. Cream together butter and coconut sugar.
  3. Beat in eggs one at a time and stir in vanilla.
  4. Stir in baking mix, salt, and chocolate chips.
  5. Spoon batter onto baking sheet and bake for 10–12 minutes.
