Muffins - Paleo Apple Cinnamon Coconut

  1. Preheat the oven to 350 F
  2. Line a muffin tin with liners or parchment paper.  I like to apply a THIN coat of coconut oil, as the muffins stick to the parchment paper.
  3. In a large bowl, mix your dry ingredients: coconut flour, baking powder, cinnamon, and salt.
  4. In a small mix your wet ingredients: coconut oil, coconut milk, maple syrup and eggs.
  5. Add the wet ingredients to the dry and stir until just combined.
  6. Fold in your shredded coconut and apples.
  7. scoop ¼ cup of batter into each muffin tin and bake for 25 minutes or until a toothpick inserted in the center comes out clean.

Notes


I like to use organic applesauce when I don't have the apples on hand.  Sometimes, I throw in some raisins.

Then, for some extra kick, I will top it with warm applesauce and a sprinkling of cinnamon.
