Slow Cooker - Tuscan Chicken and Bacon Soup

Ingredients


 1 ½ lbs. cooked rotisserie chicken, shredded - not needed for true Zuppa

 1 package ready made nitrate free bacon, shredded

 4 browned Italian sausage, sliced

 4 cups baby spinach or kale, shredded

 4 cloves garlic, minced

 3 carrots, diced - not needed for true Zuppa

 2 stalks celery, diced - not needed for true Zuppa

 1 onion, diced

 6 cups organic, low-sodium chicken stock

 2  cans Great Northern beans,  drained and rinsed, or 2 large russet potatoes, sliced

 Salt and freshly ground pepper, to taste


Directions


Place all ingredients in the slow cooker and cook on Low for 6 to 8 hours.

I made some embellishments to this recipe, as needed, to mimic my much loved Zuppa Toscana Olive Garden Soup, without the heavy cream.  My embellishments are in italics.
