Prep Notes

I made my usual variations to the recipe to encompass cleanest eating and different dietary needs.

Cooking Time

to cook the chicken

serves 4-6

  • 2 cups cooked, pastured chicken, chopped
  • 4 cups organic romaine, chopped
  • 2 cups organic strawberries, chopped
  • ½ cup dried cranberries (sub with other fresh fruit if watching your sugar)
  • ¼ cup crumbled, pastured goat cheese (this can be omitted)
  • ¼ cup sliced almonds or other nut or seed

  • Strawberry Balsamic Dressing:
  • 1 cup organic strawberries
  • ¼ cup balsamic vinegar
  • ¼ cup organic extra-virgin olive oil
  • 1 tbsp Dijon mustard
  • 1 clove garlic, minced
  • ¼ tsp sea salt
  • ¼ tsp pepper

  1. To make the strawberry balsamic dressing: In a food processor or blender, pulse the strawberries, balsamic vinegar, olive oil, dijon mustard, garlic, salt and pepper until smooth. Set aside.

       2. In a large bowl toss the chicken, romaine, strawberries, dried cranberries, goat cheese, and sliced almonds.

       3. Toss with dressing or drizzle on top of served portions.

Everything about this salad is amazing from the chicken, to the fresh berries, to everything in between.  And the sweet strawberry balsamic dressing is out of this world!.  It is the perfect finishing touch to this salad.

This salad is incredible and perfect for the summer with all of the fresh berries inside.

Try it and fall in love!
