Tropical Shrimp Salad

For the Salad
  1. 2 cups arugula or baby greens
  2. 8-10 shrimp, precooked and chilled (wild)
  3. 1/4 cup mango, diced
  4. 1/4 cup pineapple, diced
  5. 1/4 cup grape tomatoes, halved
  6. 1/2 avocado, diced
  7. 1 kiwi, sliced
  8. thinly sliced red onions (optional)
For the dressing
  1. 1/4 cup olive oil
  2. 2 tablespoons champagne vinegar
  3. 1 teaspoon honey
  4. juice from 1 lime
  5. fresh black pepper


  1. In large bowl, combine all salad ingredients together and gently toss.
  2. In a small bowl combine dressing ingredients and whisk to mix.
  3. Drizzle 2 tablespoons of dressing over salad, and enjoy!
